Lightly Seasoned Lamb Patty Gluten-Free Recipe

While I'm almost embarrassed to call this a recipe, I think it's important show you just how simple cooking a protein such as lamb can be. Lamb has a very unique flavor and adding a lot of ingredients to a lamb patty only muddies the flavors. I would rather have lightly seasoned lamb patties that highlights the lamb. You can add toppings to the burger which can enhance the flavor of the meat or you can simply serve more seasoned side dishes with it to compliment the flavor of the lamb. Personally, I prefer the later. Whichever you choose, these Gluten-Free Lightly Seasoned Lamb Patties are sure to please!
Ingredients
  • Zest of half a lemon
  • 1 teaspoon sea salt
  • Black pepper, to taste
  • 2 pounds ground lamb
Instructions
  1. In a small bowl, combine lemon zest, salt, and pepper. Mix well and set aside.
  2. Form the ground lamb into 4 large patties and place the patties directly into a glass baking dish. Do not put the lamb on a baking rack. Letting it bake in it’s own drippings keeps it moist and vastly improves the flavor.
  3. Sprinkle the top of each patty with the spice mixture.
  4. Put the lamb in the oven, and bake, uncovered, for 35-40 minutes, or until the lamb is no longer pink in the center.

Notes
If you are serving children or light eaters, ¼- to ⅓-pound patties may be large enough, and 2 pounds of lamb will serve more people.

These patties freeze and reheat easily.

To freeze any leftovers, pop them into individual a Zip Lock bags when they've cooled and spoon a tablespoon of the drippings into each bag.

To reheat, just microwave the lamb patty on high for 2-3 minutes with the bag slightly open. The amount of time needed to reheat the patties will depend upon the power of your microwave.
