Gluten-Free Kentucky Hot Brown Sandwich Recipe
 Down south, a Kentucky Hot Brown is a traditional recipe for a hot turkey sandwich. It can be served as an entrée or a sandwich. If I'm making a sandwich, I like to roll it up in a large Romaine leaf instead of using gluten-free bread, but the choice is yours. It's delicious any time of year, but remember it's also a great way to use up your turkey leftovers after Thanksgiving.

 Ingredients
 - 8 slices of bacon
 - 1 tablespoon grass-fed butter
 - ½ cup heavy cream
 - ½ cup water
 - 1½ cups grated cheddar cheese
 - few drops Tabasco sauce (optional – to taste)
 - 1 tablespoon Thick it Up
 - 4 large Romaine lettuce leaves (if making sandwich version)
 - 4 slices of turkey breast, medium thick
 - 4 slices of tomato
 
Instructions
 - Cook the bacon until crisp. Set aside.
 - Preheat the broiler.
 - To make the sauce, melt butter in a saucepan. Add the cream and water and stir over medium high heat to combine.
 - Add the shredded cheddar cheese and Tabasco sauce and continue cooking, stirring constantly, until the cheese is melted and well blended.
 - Add the Thick it Up 1 teaspoon at a time, stirring constantly until the sauce thickens.
 - Place the sliced turkey in a baking pan.
 - Pour the cheese sauce over the turkey and place a tomato slice in the center of each turkey slice.
 - Put a piece of bacon on either side of the tomato.
 - Place under the broiler until the cheese starts to bubble and begin to turn slightly brown.
 - Transfer the Hot Brown to dinner plates (if you are serving it as an entree) or to large Romaine lettuce leaves (if you are serving it serving as a sandwich).

 VARIATIONS
To serve Hot Brown as a sandwich, slide the broiled Hot Brown onto your favorite gluten-free bread.
