Sunny Cantaloupe Gluten-Free Recipe

Sunny Cantaloupe Gluten-Free Recipe
If you're looking for a fun and whimsical dessert recipe, Sunny Cantaloupe is the way to go. It's a great make-ahead recipe and stays fresh in the refrigerator for several days. You can use any flavor sugar-free Jell-O gelatin you like and I guarantee that young children will go crazy for this dessert.

Ingredients
  • ½ cantaloupe
  • small package sugar-free Jell-O (any flavor)
  • 1 cup boiling water
  • 1 cup cold water
Instructions
  1. If the cantaloupe half is not already seeded, remove the seeds but do not slice it.
  2. Prepare the Jell-O gelatin according to the package directions. Place the prepared Jell-O gelatin in the refrigerator until cooled but not set, about 20 minutes.
  3. Pour the cooled gelatin into the cavity of the cantaloupe, cover it tightly with plastic wrap, and place the filled cantaloupe into the refrigerator until the Jell-O gelatin is set.
  4. You most probably will have leftover Jell-O gelatin. Simply pour it into small custard cups to serve as a dessert or a snack at another time.
  5. To serve, slice the cantaloupe thinly with a sharp knife and place the slices on a dessert plate.
